white chocolate mousse with a cranberry whipped cream
8 srvs, about 1/2 cup ea
1/4 cup sugar
1 teaspoon orange zest
1 cup half & half
1 cup white chocolate chips
1/2 cup canned cranberry sauce
1 tablespoon orange juice
4 cups lite whipped topping, divided
beat eggs with an electric mixer until thick and creamy, about 3 minutes.
slowly beat in sugar and orange zest.
in a small sauce pan, gently heat half & half until almost at a boil.
add a very small amount of the hot milk mixture to the egg mixture.
whisk continuously and gradually add in remaining milk mixture.
whisk until fully incorporated.
return mixture to sauce pan.
cook over low heat, stirring continuously until mixture thickens, about 5 minutes.
stir in chocolate chips until fully melted and incorporated.
place mixture into a bowl, cover, and chill about 2 hours, stirring occasionally.
place cranberry sauce and orange juice in blender and puree until smooth.
in a medium bowl, gently fold cranberry sauce into 1 cup whipped topping.
refrigerate until ready to serve.
gently fold remaining 3 cups of whipped topping into chilled chocolate mixture until combined.
spoon mousse into 8 small dessert dishes.
refrigerate until serving.
top each mousse with a large dollop of the cranberry whipped topping.
