soft pretzels


3 1/2 cups warm water, divided
1 1/8 teaspoons active dry yeast
2 tablespoons brown sugar
1 1/8 teaspoons salt
1 cup bread flour
3 cups all-purpose flour
2 tablespoons baking soda
4 tablespoons butter


  1. sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve.
  2. add sugar and stir to dissolve; add flour and salt.
  3. knead dough until smooth and elastic.
  4. let rise till doubled in size or at least 1 hour.
  5. while dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 tablespoons baking soda.
  6. after dough has risen, punch the air out of it.
  7. divide the dough into 12 pieces, roll into a long rope. (about 1/2 inch or less thick) and shape.
  8. shape the rope like a u and cross the two ends over each other, pull the ends down and attach them at the bottom of the u.
  9. carefully dip pretzel in soda solution for 20 seconds and place on greased baking sheet.
  10. allow pretzels to rise again till doubled in size.
  11. baking at 450°f for about 10 minutes or until golden.
  12. brush with melted butter and enjoy!
