roasted potatoes and green beans


1 lb. potatoes
10 oz. green beans, trimmed
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 garlic cloves, thinly sliced
1 tablespoon minced fresh rosemary
1/4 teaspoon red pepper flakes
1/4 teaspoon lemon zest
2 tablespoons grated Parmesan cheese


  1. preheat oven to 425°F.
  2. slice potatoes into wedges; slice smaller potatoes in half.
  3. on a large sheet tray, sprinkle potatoes and green beans with olive oil, salt, pepper, garlic, rosemary, pepper flakes and lemon zest; toss until well coated.
  4. bake for about 25 minutes, stirring once.
  5. sprinkle Parmesan cheese on top before serving.
