quick-fix chili


1 lb. ground turkey or lean ground beef
1 medium onion, chopped
1 can (15.5 oz.) red kidney beans, no-salt added
1 can (15 oz.) black beans
1 can (4 oz.) chopped green chilies (optional)
1–2 tablespoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/4 teaspoon black pepper
1 can (14.5 oz.) stewed tomatoes
1 can (10.75 oz.) reduced sodium condensed tomato soup
hot sauce to taste


  1. brown ground turkey with chopped onion in a large skillet or pot.
  2. drain and rinse kidney and black beans.
  3. add to ground turkey with chilies and seasonings.
  4. stir to mix.
  5. add tomatoes and tomato soup.
  6. let simmer 10–15 minutes.
  7. add hot sauce to taste.

suggestion: serve over rice or pasta. top with grated reduced fat cheddar or monterey jack cheese and diced onion. serve with a tossed salad and cornbread.
