3 tablespoons butter
10 oz. marshmallows
1/4 cup pumpkin puree
1 1/2 teaspoons pumpkin pie spice
6 oz. white chocolate chips
6 cups rice cereal
2 oz. chocolate chips
1/4 teaspoon cinnamon for garnish, optional
grease a 9x13 baking dish with vegetable cooking spray.
in a large pot, melt butter over medium heat.
add marshmallows, pumpkin puree, pumpkin spice, and white chocolate chips.
stir to combine and melt all ingredients:.
when marshmallows and chocolate are fully melted and combined into a smooth creamy mixture, slowly fold in cereal until completely coated.
pour mixture into prepared baking dish.
spray a metal spoon with cooking spray and press cereal mixture into pan to flatten.
melt 2 oz. chocolate chips in microwave.
add a teaspoon of vegetable oil if chocolate is not melting smoothly.
once chocolate is fully melted, drizzle onto treats.
sprinkle with cinnamon.
let rest at room temperature for about 20 minutes before cutting into squares.
