mixed spice cake


nonstick cooking spray
1/2 cup golden raisins
1/2 cup orange juice
2 1/4 cups self-rising flour
1/4 cup firmly packed brown sugar
2 teaspoons poppy seeds
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
1/8 teaspoon cayenne
1 1/4 cups fat-free buttermilk
3 egg whites
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract


  1. preheat oven to 350°F.
  2. coat a 9x13-inch pan with cooking spray.
  3. in a small bowl, soak raisins in orange juice for 15 minutes.
  4. in a large bowl, mix together flour, brown sugar, poppy seed, cinnamon, allspice, ginger, and cayenne.
  5. stir in raisin mixture, buttermilk, egg whites, applesauce, and vanilla.
  6. pour batter into pan.
  7. bake 35-40 minutes or until toothpick inserted in center of cake comes out clean.
  8. cool cake completely, then dust with powdered sugar.
