mini pumpkin mousse trifles


2 cups prepared vanilla pudding
1 cup canned pumpkin pie mix filling
2 cups whipped cream, divided
3/4 cup roughly crushed ginger snap cookies (12-16 cookies)
1/3 cup pecans, chopped
1/8 teaspoon cinnamon (for garnish)
6 gingersnaps for garnish


  1. in a large bowl, combine vanilla pudding and canned pumpkin pie filling.
  2. gently fold in 1 cup whipped topping.
  3. in each of 6 small glasses, layer pumpkin mousse, remaining whipped topping (saving a small amount for garnish), and crushed ginger snap cookies.
  4. garnish the top of each trifle with chopped pecans, a small dollop of whipped topping and a light sprinkle of cinnamon and garnish with gingersnap.
  5. serve chilled.
