jerk turkey sandwich with pineapple slaw


mojo slaw:
3 tablespoons nonfat plain yogurt
3 tablespoons light mayonnaise
1 tablespoon fresh orange juice
1 teaspoon orange zest
1 garlic clove, minced
2 cups packaged coleslaw mix
1 small orange, peeled and sectioned
1/2 cup chopped fresh pineapple
2 tablespoons chopped fresh cilantro
2 tablespoons chopped red onion
jerk turkey:
2 teaspoons canola oil
1 pkg. (17.6 oz.) turkey breast cutlets
1/4 cup jerk seasoning
6 kaiser rolls


  1. for the slaw, combine yogurt, mayonnaise, orange juice, orange zest and garlic in a large bowl.
  2. add coleslaw mix, orange sections, pineapple, cilantro and onion; mix well.
  3. cover and refrigerate until ready to serve.
  4. heat oil over medium-high heat in a large, nonstick skillet.
  5. sprinkle both sides of each cutlet with about 1 teaspoon jerk seasoning.
  6. add cutlets to skillet; cook 2 minutes per side or until browned and an instant-read thermometer registers 165°f.
  7. place turkey cutlets on each roll, top with 1/3 cup of the slaw, cover with top half of roll, and serve.
