herbed pork roast


1 tablespoon caraway seeds
1 tablespoon Dijon mustard
2 teaspoons water
1 teaspoon dried marjoram
1/2 teaspoon salt
3 to 3 1/2 lb. pork loin roast, trimmed of excess fat


  1. preheat oven to 325°F.
  2. crush caraway seeds with a mortar and pestle, or place seeds in a zippered storage bag and crush with a rolling pin.
  3. mix crushed seeds, mustard, water, marjoram and salt together in a small bowl.
  4. pat surface of roast to dry completely; rub herb mixture on top side of the roast.
  5. roast on a rack in a shallow roasting pan in preheated oven for about 60-70 minutes, or until the internal temperature reaches 145°F.
  6. allow roast to sit for 3 minutes before carving.
