fresh apple cake


1/2 cup shortening
1 cup granulated sugar
1 1/2 cups brown sugar, divided
2 eggs
2 1/2 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
8 oz. or 1 cup dr. pepper
2 cups apples, peeled and finely chopped
3/4 cup chopped pecans


  1. cream shortening.
  2. gradually add granulated sugar and 1 cup brown sugar.
  3. cream well.
  4. add eggs, one at a time, creaming well.
  5. sift flour with baking powder, soda and salt.
  6. add dry ingredients alternately with dr. pepper, mixing well after each addition.
  7. fold in apples.
  8. pour into greased and floured 13 x 9 x 2-inch pan.
  9. combine the remaining 1/2 cup brown sugar with pecans.
  10. sprinkle over batter.
  11. bake at 350°f about 45 minutes or until done.
