edamame hummus


2 cups frozen shelled edamame
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon cumin
1/8 teaspoon coriander
3 cloves garlic, crushed
1/4 cup chopped fresh parsley
3 tablespoons tahini
3 tablespoons water
2 tablespoons lemon juice
1/4 teaspoon paprika


  1. prepare edamame according to package directions, omitting the salt; let cool.
  2. put oil, salt, cumin, coriander, and garlic in the food processor and pulse 2 or 3 times.
  3. add edamame to processor along with parsley, tahini, water, and lemon juice; process for one minute or until smooth.
  4. spoon into a serving bowl and sprinkle with paprika.
  5. chill for later or serve immediately with pita chips or toasted breads.
