dried cherry wild rice


1/2 cup unsalted butter
1/4 cup finely chopped shallots
1 clove garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried sage
1 cup dried cherries
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/4 cup chicken broth
2 cups wild rice, cooked according to package directions


  1. spray a 2 quart casserole dish with nonstick cooking spray.
  2. in a large skillet over medium heat, melt the butter.
  3. add the shallots, garlic, thyme and sage; cook, stirring until the onion is softened, about 5 minutes.
  4. add the cherries, salt, pepper and chicken broth and bring to a boil.
  5. stir in the wild rice.
  6. transfer to the prepared dish and cover with foil.
  7. bake at 350°F for about 20 minutes or until rice is heated through.
