chipotle baked beans

ingredients


5 slices bacon, chopped
1 small onion, chopped
1/2 cup chicken broth
1/2 cup ketchup
1/4 cup cider vinegar
1/4 cup molasses
1/4 cup brown sugar
1 teaspoon dry mustard
2 chipotle chiles, canned in adobo sauce, seeded and chopped
1 can (15 oz.) black beans, rinsed and drained
1 can (15 oz.) pinto beans, rinsed and drained
1 can (28 oz.) baked beans
ground black pepper, to taste

directions


  1. preheat oven to 350°f.
  2. heat a dutch oven over medium-high heat.
  3. add bacon and sauté about 5 minutes.
  4. add onion and sauté until translucent, about 5 minutes more, stirring occasionally.
  5. stir in remaining ingredients and bake uncovered for about 30 minutes or, simmer on low heat on the stove top, covered, for 45 minutes to an hour.
  6. season with ground black pepper to taste.
