bacon, pecan, blue cheese ball


8 oz. cream cheese, softened
4 oz. crumbled blue cheese
1/4 cup 2% milk
1/3 cup chopped green onion
1/2 cup finely chopped cooked bacon
2/3 cup chopped pecans
3 tablespoons chopped parsley
crackers for serving


  1. in a mixer, combine cream cheese, blue cheese, and milk until somewhat smooth.
  2. gently fold in green onions, 1/4 cup cooked bacon, and 1/3 cup chopped pecans.
  3. transfer mixture to a large piece of plastic wrap and form into a football like shape.
  4. wrap tightly and chill (about 45 minutes).
  5. on a plate, combine remaining 1/4 cup bacon, 1/3 cup chopped pecans, and parsley.
  6. roll cheese ball into mixture, coating all sides.
  7. refrigerate until ready to serve.
